Imagine having dinner with a picky 4 year old child - one of those insufferable children who only eats chicken nuggets, pizza, and white bread. And then imagine that, for health reasons, that child needs to go low-carb. You'd be in for a painful adjustment, with lots of whining and crying, right? Well, that's what's going on in my own head these days as I adjust to the reality that I need to drastically reduce my carbohydrate intake in order to avoid Type 2 Diabetes and all of its related complications.
While I am not quite as restrictive as the imaginary preschooler above, I have 45 years of picky eating under my belt, so being able to adapt is, for me, more difficult than a 4 year old. Although I don't tantrum out loud, believe me, it's all in my head, and it's making me miserable.
I started this blog to chronicle my experience as a carb- and sugar-addicted middle aged picky eater trying to restore my health, and to share some of the ideas along the way that make things easier, in the hopes of being a resource for other people in my shoes.
So here is one promising idea for picky eaters: a no-crust pizza with no weird ingredients, just your favorite mozzarella cheese with whatever sauce and toppings you like:

I'm going to try this tonight with Rao's Arrabiatta Sauce (the best no-sugar-added sauce that I have found, plus it's made with olive oil rather than awful seed oils) and pepperoni. I'll update to say how it goes!
